While in St. George, we’re always looking for a good place to brunch. It seems like brunch – the most enjoyable meal of the day – and vacationing go together like peas and carrots…or eggs and sausage. After a late night spent at the Fiesta Fun Center or an early morning biking around the area, a mid-morning meal is just calling your name. Add to this the crowd pleasing menu that combines both breakfast and lunch dishes, and you have a perfect family reunion activity. My I recommend my new favorite place to brunch in St. George – The Egg and I.
The Egg and I is a franchise restaurant, though only four can be found in Utah, one of which is in southern Utah. They offer a large menu with brunch essentials such as pancakes, waffles, and eggs served any style as well as house favorites like Parisian Benedict, Colorado Jack Scramble, and Viva la France French Toast. Each member of your family is bound to find something they like, no matter their taste.
My personal favorite is the Veggie Benedict. Two poached-to–perfection eggs served over artichoke hearts, mushrooms, asparagus, tomato slices, and English muffins, topped with hollandaise sauce and a slice of lemon. It was both light and filling at the same time – simply delicious. If you are looking for something more robust, try the Cambridge Skillet. A special version of eggs benedict served with ham and bacon over ranch potatoes, served with an English muffin. For the sweet tooth in your family, suggest the Raspberry Granola Pancake or Strawberry Banana Waffle. If you’re looking for something light, they also serve granola, fruit and yogurt, or oatmeal. The Egg and I is a favorite among locals too, so I suggest making a reservation or arriving early if you have a large group. The restaurant can accommodate for large groups and even offers a meeting room which would work great for a special event. Make use of their projector and put together a slideshow of pictures from the family reunion. Play it on the big screen and enjoy one last meal together before travelling your separate ways.
